The other day at my neighborhood market I spied champagne grapes, and without hesitation put them in my cart. They are a seasonal treat, that are exceptionally sweet and, well, pretty cute. I wanted to balance out the sweetness of the grape with an earthy herb, and all around savory… Oh and something easy.
I decided to make pizza. I took my fresh pizza dough and rolled it in cornmeal, (I love the texture of cornmeal). I gathered a few sprigs of thyme from my garden, carmelized a red onion, and decided on gorgonzola for my cheese. I really wanted to use toasted pine nuts, but I had only almonds in my house, so I used the almonds.
It was a big hit. I decided to freeze the remaining bunch of grapes for snacks as well as dish I will share with you next week.
Pizza {Champagne Grapes, carmelized onions, gorgonzola, thyme, and almonds}
Need:
- Pizza dough
- cornmeal
- red onions
- olive oil
- champagne grapes
- gorgonzola
- thyme
How:
Prepare your pizza dough. Set aside to rest, chop red onions and coat a pan with olive oil and cook on high heat for about ten mins, remove from heat, add thyme and set aside. Rinse grapes and allow to dry. Start prepping pizza, add the onions, gorgonzola, slice almond and finish the champagne grapes. Bake at 500 degree for about 7 mins.
