Recently our neighbors Josh and Cathy shared with us a harvest of apples. As soon as we got them home Stacey was in the kitchen thinking of some way to get the most out of them. An hour later mini-muffins are being served. I was told they were gluten free and low fat, this can sometimes raise alarm bells in my taste buds but once I got one in my mouth my fears were laid to rest. These little morsels are fantastic when warmed with a little honey. Or take them as they are.
Since fall is on it’s way these muffins are a great way to usher in the coming season. Just like BBQs in the Summer, apple muffins are the perfect fall treat. If you have little ones they will love the sweet, warm taste and you can love the fact that they are healthy. Of course, these puppies make great mini snacks for kids of all ages.
Apple Muffins (Low Fat- Gluten Free)
Need:
- 1 tsp vanilla
- 1 1/3 cup of sugar
- 2 eggs
- 2 cups gluten free flour
- 1/2 cup yogurt
- 1/3 applesauce
- pinch of salt
- 1 tsp cinnamon
- 2 cups of diced apples
- 1 tsp baking soda
- 1 tsp baking power
How:
Preheat oven to 350. Line or grease muffin tins. Beat eggs, butter, vanilla and sugar. Separate bowl combine all dry ingredients. Slowly add in dry ingredients and mix. Fold in apples (nuts and raisans, if you choose). Spoon into muffin tins, 3/4 full and bake for 20-25 mins or until toothpick runs clean.
